Simple Raw Vegan Chocolate Cake Recipe

This recipe comes from the Green Smoothie website which has an number of good raw vegan chocolate dessert recipes such as chocolate brownies and chocolate mousse.   Their chocolate recipes all call for unsweetened cocoa or carob powder, rather than the more pricey cacao.

Raw Vegan Chocolate Cake

This decadent dessert will delight chocolate lovers.

  • 1+1/2 cups raw walnuts, unsoaked
  • Dash salt
  • 12 pitted medjool dates, unsoaked
  • 1/3 cup unsweetened cocoa or carob powder
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons water
  • 1/2 cup fresh raspberries for garnish (optional)

Blend walnuts and salt in a food processor until finely ground. Add dates, cocoa powder and vanilla, process until mixture begins to stick together. Add the water and process briefly.

Transfer to a serving plate and form into a 5-inch round cake. Chill for 2 hours. Decorate the cake and plate with fresh raspberries before serving, if desired. Covered with plastic wrap, Cake will keep for three days in refrigerator or two weeks in freezer. Yields one 5-inch cake, increase amounts for more.

Vegan Hot Chocolate Recipe: Serve At Halloween

We know you’re trying to figure out how to have a delicious chocolatey Halloween party without having to offer supersweet, milk chocolate candy.  We liked this recipe for vegan hot chocolate and will try to share some more great healthy Halloween party chocolate recipes in the weeks to come.

Vegan Hot Chocolate

2 ½ cups soy milk

3 tablespoons white sugar

3 tablespoons cocoa powder

½ teaspoon

Bring all ingredients to a simmer in a saucepan over medium-high heat. Remove from heat and whisk until frothy. Serve in pretty glass mugs with orange and black ribbons tied around the handle.

Healthy Chocolate Recipe: Chocolate Chai Yogurt

Healthy chocolate sources and raw food diets often go hand in hand, because the less chocolate is processed and closer to its raw state, the healthier it is.

This Indian spiced yogurt recipe from Rawguru comes to life with cacao powder, and includes walnuts and coconut water. It would be lovely for either breakfast or dessert.

Chocolate Chai Yogurt

Ingredients

  • 2½ ounce walnuts (a little less than a cup, depending on quantity of whole walnuts, soaked 1-2 hours, dried thoroughly
  • 4 ounce coconut water (up to 5 ounces, depending on thickness preference)
  • 1 tablespoon cacao powder, more to taste
  • a little more than 1/2 t agave, more to taste
  • ¼ of a vanilla bean
  • ¼ teaspoon cinnamon
  • 1/4 t + 1/8 t cardamom seeds (or 1/4 t ground), use hand spice grinder or mortar & pestle to grind
  • .125 teaspoon garam masala
  • .125 teaspoon ground ginger
  • pinch himalayan crystal salt

Methods/steps

  1. Add all ingredients to a blender, and start out the blender on low.
  2. Use your spatula to scrape down the mixture, and then blend on high. You might also need to use the pulse mode for about 20 seconds in order to adequately grind up the vanilla bean.
  3. Pour into a small mug or glass, and enjoy right away! This yogurt is best when it’s still slightly chilled.
  4. Notes: This yogurt is assertively spiced, so spice it down if you like. You can substitute a combination of water and agave for the coconut water, but in my experience, the coconut water really elevates the recipe to another level! Lastly, I tried to add 1/8 teaspoon of lemon juice to give the recipe a little of that fermented tang, but it seemed to interfere with the flavor of the chocolate and of the chai spices.
