Artisan Chocolate & more: Amano, Claudio Corallo and Sip to Live

artisan chocolate cacao podsDespite being geared toward the Western U.S., we love reading Sunset for its food and decorating ideas.  In the January issue, they called out a number of healthy dark chocolate products, some of which were new to us.

Utah’s Amano Artisan Chocolate makes award-winning, single varietal handmade chocolate bars incorporate carefully sourced beans from Venezuela, Madagascar, Ecuador, Bali, Ghana and beyond.  They also sell hand roasted cocoa nibs and bulk chocolate.

Claudio Corallo cultivates a cacao plantation on the African island of Principe, a biologically-rich island with world-reknown cacao.  His offers complex bars, some with flavors like orange and ginger, as well as whole roasted cacao beans that have a delicious nutty texture.

We also learned about Portland, OR based Sip to Live, a shop with unique blends of organic teas based on ayurvedic principles.  Each blend helps to serve and refresh different areas of the body.  For example The Cool-Out, with its blend of chamomile, cherry bark and other herbs is made to soothe the nerves.

Healthy Hot Chocolate Recipe: Just In Time For Fall

healthy hot chocolate recipeWe came across this simply delicious healthy hot chocolate recipe at healthkicker featuring dark cocoa powder (unsweetened) and organic sugar or sugar substitute.

We think that unsweetened cocoa powder makes some of the best hot chocolate.  It’s downright simple to make and you get to control the sweetness of the beverage.   If you enjoy the taste of chocolate, you probably won’t need much sweetener to balance the bitterness.   In the same way that salt or lemon juice helps to brighten the flavors of food, you may even think of the sweetener as a way to enhance the true chocolate flavor.  Happy fall!

Healthy Hot Chocolate

Ingredients:
- 2 cups of soy, skim or rice milk
- 2 rounded teaspoons of 70% dark chocolate cocoa powder (the higher the percentage, the more bitter – but healthier – it will be)
- 2 teaspoons of organic sugar or sugar substitute

Instructions:

1. Heat the milk in a saucepan over medium heat until steaming (but not boiling).
2. Add cocoa powder and sweetener and whisk to combine ingredients.
3. Whisk the cocoa powder and sweetener until well-blended.
4. Pour into favorite mugs and enjoy!

If you feel like this recipe is too bland and you’re looking for a bit more flavor, try adding in some nutmeg or cinnamon. Also, instead of using a flavored-syrup, try adding some mint leaves (or candy cane!) or vanilla extract for an extra boost of flavor.

DIY Organic Healthy Chocolate Kits From Navitas Naturals

Have you ever dreamed of being a chocolatier?  Treehugger posted a great review of the Navitas Naturals Organic Chocolate Kit.  This looks like a fantastic gift for the chocolate lover with delicious results. And, Navitas Naturals Chocolate Kits are 100% organic, kosher, vegan, gluten-free, and raw.

The DIY chocolate kit requires no special equipment. The process involves some simple slicing, melting, mixing and freezing, and your chocolates are done in minutes!

The kit contains all organic, raw superfoods including premium cacao, maca, lucuma and mesquite.

Here’s an excerpt from the review:

Vegan Dark Chocolate Truffles Reviewed

We love finding new ideas for healthy chocolate gifts. Vegan and fair trade, Nicobella chocolates use organic ingredients such as sunflower seed butter, oat milk and fair trade dark chocolate, creating blissful chocolate assortments.  Flavors include walnut flaxseed crunch, sunflower banana butter and ginger green tea.   (The walnut flaxseed was a clear favorite in the review we found below).

“Created by dietitian, nutritionist and yoga instructor Nichole Dandrea, nicobella truffles are made with 70 percent dark chocolate — fair trade, of course — and slightly sweetened with agave nectar and brown rice syrup. Open the package and you’ll be able to identify the flavor of each truffle by the decorative garnish. The Ginger Green Tea truffle, for example, is sprinkled with a green tea powder; the Blueberry Almond truffle has a piece of almond pressed onto a corner.

How do the truffles taste? My favorite of the six is the most crunchy-sounding of the bunch: Walnut Flaxseed Crunch. This decadent truffle had a perfect nutty creaminess — full of Omega-3s, to boot. I also loved the Pumpkin Chia truffle, which tasted like a rich, flavorful pie covered in chocolate, and the Ginger Green Tea truffle, which had a fierce ginger kick that made it the most intense of the six.”
